Baking on a hot griddle or plancha is not a brand new fad, but an age-old tradition that has come over from the Basque Country in recent years. ‘Plancha’ literally means ‘Plate’ in Spanish, and there are many Basque and Spanish dishes that are prepared ‘a la plancha’, or ‘on the (hot) plate’.
